On February 28, the Budapest Cooking Club brings old-school pig-slaughter feast (disznótoros) vibes to Borganika (1072 Budapest, Akácfa Street (Akácfa utca) 42–48), with smoke, crunch, and pálinka at the center. Hurka and kolbász are a given, but guests roll up their sleeves to make the cracklings, homemade pickles, and oniony mashed potatoes together. Think workshop meets feast, with plenty to sip between bites.
What’s on the Table
The menu lands heavy and happy: fresh lard-on-bread boards with red onion and white bread; both blood and liver hurka; roasted kolbász; mash folded with sweet onions; and a crisp homemade cabbage salad, plus mustard for dipping. Drinks don’t shy away either—beer, wine, and, of course, pálinka keep spirits high.
