The Legend of Kapuvár’s Böllérmáj
Kapuvár’s signature dish ties back to the once-famous Gulyás Inn (Gulyás Csárda) and its creator, József Orbán (Orbán József), who was born 100 years ago. The celebrated böllérmáj blends pork liver and pork brain with onions and sweet paprika, then slow-fries to a deep, classic Hungarian flavor. It’s a staple across local eateries and has become a culinary calling card for Kapuvár over the decades.
