The evening kicks off at 6:00 p.m. with an amuse-bouche: a beet macaron filled with quince-beet gel and velvety goose liver mousse. Next, try chilled confit goose gizzard rillette, tangy parsnip cream, and ginger brioche. The soup course offers fragrant goose broth with julienned vegetables, mung bean sprouts, soba noodles, and coriander.

Taste the warm starter—goose breast mille-feuille with tarragon potato foam and crunchy Mangalica (mangalica) pork rind chips.
