In Vönöck (Vönöck), just 5 miles from Celldömölk (Celldömölk), the Buti Pálinka Distillery (Buti Pálinkafőzde) has been producing top-quality pálinka all year round for over two decades. Founded as a family business and contract distillery in 2002, the operation began with a single 418 oz (wood-fired) pot still. This hefty cauldron worked well for large batches, but as small-scale customers started coming in, a 220 oz wood-fired pot still was soon added to handle more modest amounts of mash separately.

Expanding for More Flavors

As demand kept growing, the founders dreamed of building something bigger and even more sophisticated. Their vision became reality in 2012 thanks to grants and loans: the distillery was renovated, and new gas-powered heating systems along with modern pots and cooling devices were installed. But the team never abandoned tradition—the original wood-fired pots still stand ready for use, preserving the classic method (and a dash of nostalgia), especially for distilling pomace.

Tradition Meets Innovation

Throughout every upgrade, the distillery never abandoned the “kisüsti” double-distillation technique, a hallmark of quality Hungarian pálinka. Today, production runs across two processing plants, always tailored to meet the needs of the client. The Buti team’s proud slogan says it all: “Honest, decent work. Our clients can trust us and leave satisfied—hopefully coming back again for another round.” The operation is open for business year-round, from January 1st to December 31st, 2025.

2025, adrienne
